Fiesta Chicken

Ingredients
- 4 chicken breasts
- 3 Tbsp. Butter
- 3 Tbsp. Olde English sharp cheese spread
- 2 tsp. instant minced onions
- 1 tsp. salt
- 1 tsp. accent (spice)
- 2 Tbsp. chopped green chilies
- 1 cup Cheese Nips (crushed)
- 1 1/2 Tbsp. taco seasoning mix
Instructions
- Prep by pounding out chicken flat. For the filling, beat together butter and Olde English mix, salt, onion, accent, and chilies. Place a small portion of filling at end of flat chicken pieces. Roll and tuck pieces to enclose filling and fasten with toothpicks. Mix crushed Cheese Nips and taco mix. Melt 1/4 cup butter. Dip each piece in butter and roll in topping mix. Place in microwave casserole dish and cover with wax paper. Microwave on high 10-12 min. Rotate after 5 minutes and let stand for 5 minutes after cooking. Serve with rice and taco toppings.
