Confetti Coleslaw

Ingredients

• 1 bag coleslaw mix (shredded green and red cabbage and carrots)
• 1 yellow pepper, seeded and diced
• 1 red pepper, seeded and diced
• 4 green onions, diced
• 1/2 cup mayonnaise
• 1 Tbsp. cider or red wine vinegar
• 1 tsp. sugar
• 1/4 tsp. salt
• 1/2 tsp. celery seed

Instructions

1. Combine coleslaw mix, peppers and onions in a large bowl.
2. In a small bowl, whisk together mayonnaise, vinegar, sugar, salt and celery seed.
3. Pour dressing over salad and toss to coat.
4. Chill at least one hour before serving. (We love to have this with barbecue sandwiches and baked beans.)
