White Chicken Chili

Ingredients
- 4 chicken breasts, thawed
- 1 packet of taco seasoning
- 1/2 onion, diced
- 1-2 tsp. garlic
- 1 (4 oz.) can diced green chiles
- 4 cups chicken broth
- 1 can black beans, rinsed
- 1 can corn, rinsed
- 1 can navy beans, rinsed
- 1 can northern or cannelli beans, rinsed
- 2 tsp. cumin
- dried cilantro (optional)
- 1 cup sour cream or nonfat plain Greek yogurt
- Splash of lime juice
Instructions
- Cut chicken breasts into small cubes, place in a skillet with olive oil and sprinkle over taco seasoning. Brown, but do not overcook. Add onion, garlic, green chiles and sauté until onions are translucent. Pour into large saucepan and add 3 cups of chicken broth (save the last cup for only if you want it thinner at the end). Add beans, corn, cumin, and cilantro. Simmer for 30 minutes until starts getting thickish. Remove from heat until no longer bubbling and add sour cream/yogurt and lime juice.
