Spinach Cheese Bake

Ingredients

• 1 (10 oz.) package frozen, chopped spinach
• 2 Tbsp. flour
• 2 eggs, beaten
• 1 (3 oz.) package cream cheese, cubed
• 3/4 cup cheddar cheese, shredded or cubed
• 1/2 tsp. salt
• 1 1/2 tsp. instant minced onion
• 1/4 cup butter, cubed
• Topping:
• 1/2 cup fine breadcrumbs
• 1/4 cup butter
• 1/3 cup parmesan cheese

Instructions

1. In 1 1/2 quart dish, cook spinach on high for 6 minutes, stirring after 3 minutes. Drain, stir in flour, then eggs, cheese, butter, onion, and salt. Mix well. Cook on high for 3 minutes at a time, then stirring thoroughly between each 3 minutes, until eggs start to fluff and everything's creamy and melted. Remove from microwave.
2. Melt 1/4 cup butter and add breadcrumbs. Mix well and sprinkle over spinach, top with parmesan cheese. Brown in oven.
