Best Oatmeal Raisin Cookies Ever

Ingredients
- Dry Ingredients:
- 3 cups old fashioned oats
- 1 cup all-purpose flour
- 3/4 tsp. salt
- 1/2 tsp. baking powder
- Wet Ingredients:
- 4 Tbsp. unsalted butter, browned
- 1/2 cup vegetable oil
- 1/4 tsp. cinnamon added to hot butter
- 3/4 cup brown sugar, packed
- 1/2 cup white sugar
- 1 egg + 1 yolk
- 1 tsp. vanilla
- 1/2 cup raisins
Instructions
- Preheat oven in 375º F. Mix dry ingredients in a bowl; set aside. In a saucepan, heat 4 Tbsp. butter until melted and just browned. Add cinnamon. Mix in a bowl with the remaining wet ingredients (minus raisins). Stir in dry ingredients. Add raisins. Use a big size 3 Tbsp. scoop to make balls. Place on parchment paper on a cookie sheet. Flatten the balls until they are ~ 2 1/2 - 3-in wide.
- Bake for 8-10 minutes. Remove from the oven. Cookies will appear underbaked but leave them on the hot cookie sheet for 5 minutes to finish cooking. Place on a cooling rack to cool. Makes 16 large cookies.
