Bread Recipe

I add a teaspoon of yeast when actually making the bread. and I bake at 350º for 28 minutes.

  1. Starter/Feeder:
  2. In a small bowl mix 3/4 cup sugar, 3 Tbsp. potato flakes and 1 cup hot water and stir till dissolved.
  3. Pour this mixture in a large plastic container with a lid. (I use a large cottage cheese container or a large margarine container). Poke/slice holes in top of lid so it won't explode. Leave on the counter all day (8 hours) put in the refrigerator. 2-3 days later, take out container and leave on the counter 8 hours.
  4. (If you are creating a NEW starter, continue with the above procedures again and put back in the refrigerator so you have at least 2 cups of liquid always in your container). If you will actually be making bread that day follow the instructions in the next paragraph. Remember to mix up a starter and leave on counter. AFTER you have removed what you need to make the bread, add that mixture to the plastic container and put back in the refrigerator. You must feed the liquid once a week whether you make bread or not by mixing up another "starter". But don't get more than 2-3 cups of starter in one container - it won't ferment.
  5. Bread:
  6. Remove container from refrigerator and let sit on the counter all day (6-8 hrs). Then in a large mixing bowl, add 1/2 cup sugar, 1 1/2 tsp. salt, 1/2 cup corn oil, 1 1/2 cup hot water and mix well.
  7. Then add 1 cup of your "starter mix". Stir. Gradually add about 5 cups of bread flour. Add flour as needed, and pour out on floured surface and knead/mix break with more flour until a SOFT ball of dough is formed. Put back in bowl and let sit covered in a warm room (or wrap a towel around the bottom of the bowl to keep warm) all day or night (8-12hr). Then place onto floured surface and divide into 3 equal balls and form into a long oval bread ball and place in 3 sprayed/oiled bread pans. Cover again in a warm place for another 8-12 hrs. Bake 22 minutes at 375º oven. Let sit in pan until cool and then remove and wrap with saran wrap to keep fresh.
  8. ENJOY!! It may seem hard to make but it is very easy it just takes 1 1/2 days to make due to the rising of the bread.
