Sweet Potato Apple Sausage Sheet Pan

Ingredients
- chicken and apple sausage
- 2 sweet potatoes
- 1 red onion
- 2 honeycrisp apples
- 2-3 cups halved brussel sprouts
- 2 cloves minced garlic
- fresh rosemary
- fresh thyme
- fresh sage
- olive oil
- salt & pepper
Instructions
- Preheat oven to 400º and spray sheet pan with nonstick spray. Peel sweet potatoes. Cube sweet potatoes, red onion, and apples. Slice sausage. Halve brussel sprouts. Arrange on sheet pan and add minced garlic, rosemary, thyme, and sage; roughly chopped. Drizzle with olive oil and salt/pepper. Mix and bake for 35 – 40 mins or until sweet potatoes are soft. Rotate pan halfway through to cook evenly.
